Sample Menu

This is the menu from my August 2001 Temagami trip. The down side - some of this food is a bit heavy in the pack. The up side - a fair bit of fresh food and variety. I'll post some recipes soon; for now the descriptions of major ingredients should be a fairly good guide.

The menu was designed with campfire cooking in mind; if you're going to be using a stove, fewer cooked breakfasts and shorter cooking meals would be well advised.

Day 1

Breakfast

Lunch

Bagels w/cheese, english cucumber, tomato, hot mustard.

Dinner

Burritos (made with kidney beans, fresh tomatoes, onion, garlic, cheese, green pepper)

 

Day 2

Breakfast

Granola w/powdered milk, oranges

Lunch

Pita bread w/instant hummus (made at breakfast and stored in zip lock), english cucumber, sprouts

Dinner

Penne w/tomato sauce (fresh green peppers, onion, garlic)

Day 3

Breakfast

Breakfast burritos (using dried egg and egg mixes, dehydrated hash browns and dehydrated veggies; from Backpacker Magazine)

Lunch

Bagels w/cheese, english cucumber, tomato, hot mustard.

Dinner

Daal w/rice (fresh onion and garlic)

Day 4

Breakfast

Bannock (w/cheddar cheese chunks baked in), Oranges

Lunch

Rye bread w/peanut butter, nutella (the vacuum-sealed, heavy 1 lb. loaves of german-style rye keep for more than a week while sealed, and for at least a couple of days after opening)

Dinner

Chili (made with dehydrated kidney beans, textured vegetable protein, and dehydrated veggies)

Lunch

Instant soup; tortillas w/instant hummus and instant black beans

Dinner

Macaroni & cheese

Day 6

Breakfast

Granola w/powdered milk

Lunch

Rye bread w/peanut butter & nutella

Sweet potato & lentil stew w/instant mashed potatoes

Day 7

Breakfast

Instant oatmeal, dried fruit

Snacks

Apples, Oranges, Granola bars (home-made), Trail mix, Dehydrated fruit bars

Extras

Tea, coffee, hot chocolate, drink mixes (iced tea, Gatorade, etc.), late night snacks (my favourite - the fresh "two-bite" brownies sold at many grocery stores - they keep for about four or five days).
